- As a guide bring meat to room temperature
- Rub heavily with salt, squeeze with lemon
- Place in very hot oven for the first half hour to crisp the skin and then turn down to 180 degrees.
- Bake for 50minute per kilogram.
COOKING TIP: Cover bottom of baking tray with water before baking
